It seems like there is a maximum span for chords if I want them to be bracketed by one big round bracket. Is that so? (And if so, do you have plans for extending the possibilities?)

I reply to myself … I found that if I add a note in the middle of the chord, the brackets behave differently! Weird?
That’s intentional - as mentioned in the manual here, Dorico automatically splits brackets when there’s a large pitch gap. You can change the pitch gap in Engrave > Engraving Options > Bracketed Noteheads > Vertical Extent.
