When you changed the fonts, if you selected “Use font’s recommended engraving options” that likely overwrote your customizations.

For the slash, the only solution I have is to use the doricolib file that I shared in this thread:

Dorico factors in the accidental height here, even if it wouldn’t cause a collision.
