Is it possible to give each voice (layer) in, for example a polyfonic composition for choir, a different color (of choice)
including staves and rests?

Welcome to the forum.
You can use the filtering options to select a voice and the property panel to change the colour of the selection. But you might find that only the noteheads change colour, not staves nor beams or stems. Not sure about the rests… Of course, in print mode, make sure you tick the colour option before exporting. Hope it helps!
Another option is to show voice colors and then include “view options” when printing/exporting - this includes the automatic colors assigned to notes/rests in different voices in the printed/exported document.
