You could also use the Reduce function. Reducing music onto fewer staves You can reduce music onto fewer staves than it was originally notated across; for example, to create a piano reduction of a choral piece.

You could a separate Choir reduction instrument, and then hide the ‘empty’ other staves, as one might in Finale. Or just use the existing Soprano and Bass staves with appropriate labelling, as Dan suggests.
