To perform a condense change, I must enter Edit Mode, but is it restricted to Page View only? Is there no way to orchestrate it alongside Gallery View simultaneously?

Yes, it it for Page view. One of the reasons for Galley (not Gallery) view is to show the music without adaptations to the page such as condensing. So that you can edit the music in ways you cannot do when it is condensed.
