All I want to do is to arm (record) my midi track and have recording start when I play my midi controller.

You need to arm the midi track, and then press record on the transport.
If you are asking if theres a way for it to automatically start recording as soon as you start playing your keyboard (without pressing record on the transport), no, I dont believe so.
There is however retrospective midi recording. Cubase saves your midi inputs even if you arent recording. If you play a melody you like but weren’t recording and wish you were, you just press that button and any notes you have played while not recording will be inserted onto your track
