I have a lot of libraries that don’t give the “select MIDI channel or audio output” option (Symphobia 2, for example). They revert to midi and audio channel 1. Is there a way within Kontakt 8 that it will do this in sequence?
I’ve tried Kontakt support, and they’re useless

If I am understanding you correctly…
In the View dropdown menu in Kontakt 8, select classic view, then switch to info tab. That should give you the midi options.

Is there a way I can run outputs in sequence as I load each instrument?

That I do not know. You will probably need to adjust them manually for each channel/instrument in the rack.
In my case, Kontakt will increment the MIDI channel with successive instruments, but not the Output.
