Sorry for a dumb question - but currently, if you freeze tracks and backup properly and say in the future you were missing a few .dll files (yes that day is approaching) - the song will play back?

The freezer files are located in the project folder/freeze/. So if you backup properly, you don’t need the source VST anymore.
Or you can Render in Place.
