the sax player is probably used seeing a double sharp…
It is a raised note - in the cello a raised E, in the saxophone a raised F#.
I don’t think it’s possible to change the spelling of the cue alone. Of course, you could decide to change the E# in the cello part to an F, and then you’d see a G in the cue. But it may depend on the overall key signature (could be F sharp minor), whether E# would still be better than the remote F natural in the cello.
But if the sax doesn’t have to play the cue, just recognise it when it happens, why bother?
You can respell notes in cues in Engrave mode:
