It would be really helpful if I were able to label the VST instruments however I choose. I’m modifying my Kontakt setup currently and I have about 7 instances that are just labeled 1-7. Making one e.g. “Untuned Percussion” etc would be so good!

actually if you don’t use multis (Halion or in Kontakt) and assign for every track/instrument a single instance of your VST, you can rename every endpoint configuration, and the name will appear in the track list.
If you use multis, you can rename the same way, but you will give the name of the group of instruments that live in that instance of Kontakt or Halion, because the end configuration includes more than one instrument.

If you mean, with “that”, using one instance per instrument, well, every new instance of Kontakt for example uses something like 80 to 100 MB RAM (at least with my tests in Cubase). So is not a big deal if you have enough RAM installed in your system (and if you use Orchestral Libraries you probably have a good amount of RAM
)
I don’t know exactly if/how-much Dorico itself suffers (for other reasons that RAM usage) using many single instances of Kontakt instead of the multi functionality, though.
