Is there an option to create default Files in Dorico in the meantime?

Not really, but you can create your own template manually. If you use macOS, there are some scripts to automate the process (search for Automator in this forum) and if you have a default file and select it, CMD+I and activate the checkbox “Template”, Dorico will create a copy of it every time you open that file, instead of the file itself.
