I tried something just now… and it made me smile.
I set the Flow name to {@projectTitle@} and I got exactly the result I expected on the 2nd page of my default template.

That’s nice to hear - you can also edit the Default master page (used for page 2 onwards automatically) so the token in the text frame at the top refers to the project title rather than flow title.
