Does anybody knows where I can find the default template locations on Mac & PC, not those I created, but those created by Nuendo (or the MR816 I tried a few days ago).

your home folder>library>preferences>nuendo5>project templates
nuendo templates are here:
applications>nuendo5>[show package contents]>contents>templates
