I have a few Project Templates saved, however I only really now use a couple. I thought to Delete the old one’s, but my question is, will this affect older projects that are recorded using the old templates?

No, it will not affect any other project. The templates are just a common *.cpr files, stored in a specific location. Once you create a project from the template, the new project, with other location has been created, the template is untouched and the new project is a new instance.
No worries, you can delete the unwanted project templates.
