I can’t seem to find the “show lanes” button when I record multiple takes on a track. Is this only a feature in pro, or can you view them all with AI?

There are no Lanes in Cubase AI. You can right-click (or Alt + right-click) to the Audio event and select, which lane should be on top from the drop-down menu.
Lanes are available in Cubase Artist and Cubase Pro only.
