There are no crash logs in your diagnostics, I’m afraid. I wonder whether perhaps Dorico is hanging rather than crashing? If you find the window turns white and says that the application has stopped responding, and you then need to forcibly quit it, that’s a hang, rather than a crash.
In such situations, you should follow the steps described by @Ulf here:
This will create a minidump file that we may then be able to examine.
