I am fluent in French, but I was mislead by the use of “Réplique” which is Cue in English, and there’s no text after the cues (I’ve checked). These are Repeats. And of course, when it’s about changing a general behavior, Engraving options is the right place.
Meanwhile, what you can do is to select all in the Full Score, Edit > Filter > Cues (optional step in Dorico 6), and enter “Jouez” as end text in the Properties Panel: it will apply on all the cues at once.
En attendant, vous pouvez sélectionner tout le contenu du conducteur, puis Édition > Filtre > Répliques (pas obligatoire dans Dorico 6) et saisir « Jouez » comme texte de fin dans le panneau de propriétés : cela s’appliquera à toutes les répliques, en une seule fois.
