a little bug(let):
If I have set a property for the Lyric line to show its verse number, then Edit->Lyrics->Edit Line of Lyrics, then close that dialogue again, the property will have vanished (i.e. the verse number will be gone).
This is true, yes, and is even documented as such in the Dorico 3 Version History PDF. It’s not a bug, but rather a limitation. Hopefully one we can address in future.

When you confirm the dialog, Dorico rewrites the entire line of lyrics. In common with editing a lyric via the Shift+L popover, properties (like Italic etc.) will be removed when you confirm the dialog, because behind the scenes the lyrics are actually deleted and recreated.
