I created a kit three days ago. Now I would like to remove an instrument if possible. I can’t get it to open. Secondly, CAN you edit a kit once created or is it just simpler to delete and start again? And, where might I find this in the manual?

It’s easy to edit a percussion kit (incl. adding/removing an instrument, changing the position of the instruments in the staff or the grid, etc.).
In Setup mode, click the three dots on the right of the green label and choose Edit percussion kit.
Once in the editor, to remove an instrument from the kit:
If you want the instrument to still be handled by the player but outside the kit, click the 3d button on the left (Remove instrument from kit), or if you want it to be totally removed, click the trash:
