I’m a Finale refugee and struggling mightily with Dorico. The movement titles automatically appear in a cut-off font (the font is too large) and seem uneditable. I can’t figure out how to begin with a pick-up rest. Also, somehow, I turned all my pages brown, and they won’t go back to white. Any assistance would be much appreciated. Thank you very much!
To make a pickup bar, click on your first bar and type shift-M for the meter popover. If you want a quarter rest pickup in 3/4, in the popover type
3/4, 1
And it will appear. For the titles, you want to edit your “first page” template in Engrave mode, on the right-hand panel.

Regarding the titles: You have to edit the Default flow heading in the Flow Headings section of the right-hand panel in Engrave Mode. Enlarge the frame vertically.
Regarding the color: This is intended to indicate a part (the full score is white), but does not affect printing or creating a PDF.

You can change the page colors from Preferences (under the Dorico name top left) and go to colors and page colors.

You appear to have extra line breaks in your Project Information Flow Names.
The solution is pretty simple:
There are newline characters at the end of the flow names of the movements 4, 5 and 6 in the side bar of Project Info. Delete them.
