No matter how hard I try, I can’t get the quarter note C on the 3rd beat to be upsteam…
And why why why are all these notes are always liked together by their overall duration. It makes simple things become really awful.
Make them individually editable please please…

You haven’t attached any screenshot or project, so it is hard to help you.
but in engrave mode, you can select individual notes (including notes which are being tied) and flip stem direction with f.

The selected C# in this example can be flipped in Write mode, but the previous one the second beat cannot.
This is very counter intuitive…
I hope the team is listening to these little issues.

as stem direction is something concerned of engraving more than content creation (as is slur direction or fine positioning), being able to select tied notes in engave mode only is consistent with dorico’s philosophy.
If this philosophy is to be taken as strictly as it is now has been critizised before, by many. For what it’s worth it is predictable behaviour for now.
