I think I’m at the point where I’ve accepted the fact that it doesn’t record midi and only does audio.
You should find the MIDI Output port there as you see it in MIDI Port Setup. In your case, you should see “2 AIRUS-1”.
Can you think of any way to make a midi out port disappear? Maybe if it is used by some other part of the program? MIDI Remote does not do this, neither does Generic Remote, correct?
You are correct. Cubase does not hide MIDI ports in MIDI Port Setup under any circumstances as far as I know.
I don’t know why it would not show up as an option on a MIDI Track. However, I’m still on v12, so I’m not ruling out that it could be a 13 issue only.
One last thing I noticed, the interface appears to have two inputs and outputs where only the second pair is selected as Visible. I would try enabling both, but I’m also not familiar with the interface in question.

Cubase can only use one device driver at a time. If you are using the Yamaha ASIO, the Focusrite is basically not functioning. If you want to use the Yamaha as your selected ASIO device, all audio connections (headphones, speakers) need to be output from that hardware, not the Focusrite.
I think we do not have to worry about audio connection as long as the MIDI track cannot be connected to a MIDI output port.

But yes, it is strange to look at a screenshot that implies the Yamaha synth brings its own audio interface. Then all of a sudden it is a Focusrite and then it is the Generic ASIO driver.

You are providing conflicting information.
If the Arius is available as an option in the drop-down under MIDI Output, then that is an output port. Cubase does not list input ports under outputs. Choose this if you wish to send the MIDI recording back to your Arius piano.
