Is there a way to globally change the settings that disallow “slashes” on grace notes? I am aware of the option to change each entry individually.
Hi @bachsama,
you can use alt and then the shortcut for inputting grace notes (depending on your keyboard language), to change between slashed and unlashed. This settings remains, as you have chosen, for the current session (the icon will reset to slashed notes if you reopen the project).

I believe if you use Engraving Options > Notes > Grace Notes > Slash on Stem > default length to “0” you’ll get the results you want.
This my have the graphical effect that @bachsama desires, but it would make the difference between slashed grace note (acciaccatura) and not slashed grace note (appoggiatura) unrecognisable. And since Doricos plays back them differently, it could create confusion for the playback:
