At one point all my waveforms in sampler was the default purple but at one point when I cleared up the pool, my sliced samples became greyed out as in the picture. They still play but I want to know if I did something to them which I shouldn’t have…

The colour of the wave form follows the track colour. It might not of always been like this in previous versions, but I’ve never really noticed until you’ve mentioned it. I’ve had a look in preferences can’t see a way to change it.
