On Steinberg official Facebook page I was told that is a problem with my system, but I believe that is a bug with Groove Agent 5 and Big Sur.

Cubase and Groove Agent are not yet supported for use with Big Sur.
Cubase 11 Pro is compatible with BIG Sur or at leas is what they saying when you want to buy it. Check here:

Text corruption. I would try toggling with the BigSur font smoothing setting
if that doesn’t work, restore standard fonts
