I just solved it. First write the notes without cross-staff, apply the fermatas, choose “one per side of staff”, highlight one, flip it over and finally select the low E in the right hand and press M. Too complicated…
There should be something in Engraving Options that makes handling fermatas easier.
Yes, I think the key here is that cross-staffing often needs to be the last step, so you can be very clear about what is on which staff.
Maybe this option?

IMHO it would be extremely useful and necessary to implement the function to hide single fermatas in a future update. In my case I have a narrator with text blocks on a single-line-staff, and the only way to get rid of the fermatas there is to drag them off the page margins (and they will reappear as soon as one makes a change to a staff position etc.). This kind of workarounds reminds me of my (insane) Finale-background. Why is it impossible to scale single fermatas down to 1% or to hide them via the properties panel (without affecting all others)?
