Is it possible to HIDE these fader automation curves? I keep on accidentally changing these with mouse clicks then I can’t remember where they were. And the UNDO has NO effect on them…

You can Lock the tracks to ensure you don’t change it accidentally.
Or you can put them to a folder and collapse the folder.

How do I lock a track?
If you get into the track controls - in this case Group/FX/VCA (at the bottom of the track list, there is a cog there), you can find a Lock icon in the left column. Just click the arrow in the middle to bring it to the right, so that it shows along the other buttons. (Read Write, Mute, Solo, etc.)
Edit: Then, a little lock icon will show on the track’s header, and you click that to lock the track.

Cubase two different undo areas. One can be found in the Edit menu, the other one in the MixConsole-History. The default undo key command for this Alt+Z on PC.
