couldn’t find this function in engrave mode as the tutorial said. (only found hide ledger lines), i’m currently using dorico 4.2.0.1092
Make sure you select only the notehead of the note for which you want to hide the stem.
It’s in the properties in Engrave mode. You need to select the note to have access to it.

Note that you can assign a shortcut to it since… today and 4.3!
