I read previous posts regarding issues with Analog Lab, but didn’t see a solution. If I just missed it my apologies.
Another question-the only way I can open the projects that Arturia screwed up is without 3rd party plugins. Is there a way to just delete the Arturia Analog Lab from those projects?

Please, get in touch with Arturia.
You can start Cubase without the 3rd party plug-ins, open the projects and remove the plug-in. Then start Cubase with all plug-ins again.
Or you can just uninstall Arturia plug-ins from your system (or remove the *.vst3 file(s) from the folder).

The plug-ins are still visible in the Inspector, MixConsole or VSTi (VST Instruments window), once you open the project. So you can remove them.
the only time I had problems with Arturia plugins I fixed it via the Arturia installer ASC.
when you pick your plugin on the bottom right side there is an arrow down. Click on that arrow and choose “clean prefs”

No problems with Analog Lab V here. MacOS. Cubase 14 Pro latest.

The problem is that I can’t open the project that I used the Analog Lab in. The project crashes straight away.

Does it crash even if you start Cubase with 3rd party plug-ins disabled?

With the 3rd party plugins disabled, it doesn’t crash when opening.
But after opening, where is the VST instrument - Aurtia analog lab ?
