An update: I see that I can remove the existing bracket on the two saxes (in that previous image I attached above) in Engraving Options --Brackets and Barlines. But how would I then create a bracket that encompasses ALL horns? (trumpet, saxes, trombone?) And (related to this): how would I then also extend the barlines so they extend beyond each staff boundary and connect all of the bracketed staves?

Without seeing the whole of the left side of your first page I can’t possibly tell you exactly what to do.
However, try experimenting with putting players in groups in Setup mode, in conjunction with fiddling in Engraving Options > Brackets and Braces.
If you can get the brackets right the barlines will almost definitely take care of themselves.
