How do I tell the Trumpet player to use mute in certain parts of the score?
Use the Playing Technique Popover (Shift+P) and write the technique (or, mute):

Sometimes we choose to ignore
My mother-in-law always said she used a rubber hammer, but I’m not sure that ever really worked with her husband/Trumpet player. He enriched everyone’s life around him though. I was always impressed with his control; he truly seemed to get better as a player he aged. So yes, they too mature.
