How do I add bars to a new project? I selected the bar, typed Shift B, and then typed +100 in the popover, and hit the return button.

Yep, you need a time signature first. The reason is, how does Dorico know how many beats to make each measure?

You don’t have to add bars first. If you just want to create 100 whole-notes worth of empty staves, you can type +100w (or +100q for quarter notes, etc).
