©️ is the same plus U+FE0F, a variation selector
There is also U+FE0E to force the plaintext version of the preceding codepoint.
Though it is a 2-byte sequence, unfortunately you can’t just delete the second character and get the plain version; they delete as one.
Of course if you have an external keyboard with your iPad, just type Option-G as we’ve been doing on Mac since 1984!
