When you say “this”, which bit are you referring to?
The plainchant? There’s no direct support for plainchant of this sort currently, though you could change the C-clef in Music Symbols Editor; use square noteheads, and do a bit of fiddling with note spacing and some lines for the neums.
But … you could simply import a graphic of that bit. There are plenty of plainsong image generators. (What a time to be alive!)

While using this piece as an exercise is fine; bear in mind that Maurice Durufle died in 1986, so his works are still in copyright.
