I’m trying to replicate this piece in Dorico. Mostly for me to get better at using Dorico. We used to sing this in our choir.
What’s the best way to achieve this?
When you say “this”, which bit are you referring to?
The plainchant? There’s no direct support for plainchant of this sort currently, though you could change the C-clef in Music Symbols Editor; use square noteheads, and do a bit of fiddling with note spacing and some lines for the neums.
But … you could simply import a graphic of that bit. There are plenty of plainsong image generators. (What a time to be alive!)

While using this piece as an exercise is fine; bear in mind that Maurice Durufle died in 1986, so his works are still in copyright.

Thanks ben. I might try adding a graphic. And yes I know it’s still copyright protected. Not going to use it publicly.
