How to unhide hidden staves?

I’m notating an organ work that begins with an extended pedal solo, so I’ve hidden the upper staff for 5 lines. Now that I need the upper staff again how do I get it back?

It’s probably easiest to just switch into Galley view, where all staves show. Start typing notes in there, and the stave(s) will reappear in Page view.
You’re looking for this option at the bottom of the screen

You can access Page view in Write mode with cmd-alt-1 and Galley view with cmd-alt-2. Now that know it, I use it all the time !
