How do I unlink my pedal notation so that I can move the release symbol without moving the ped. symbol?

If you mean move them vertically independently of each other (so the release symbol can be closer to the staff than the Ped symbol), that’s not possible I’m afraid, unless you add the release as a separate symbol (e.g. as a custom playing technique).
