I don’t know for Hypersonic specifically, but the most likely reason is that Steinberg hired another company to develop the initial product, the contract to do that work has long expired and Steinberg doesn’t have the legal right to do the update.
I also miss Hypersonic 2.
As @raino surmised, wizoo dveloped Hypersonic and a few other things, but they got bought by Digidesign in 2005, and that was the end of Hypersonic:
