If you want to add an arpeggio sign before a chord, you can do so by selecting the chord, then opening the Ornaments panel on the right-hand side in Write mode, and then tapping the arpeggio button.
Is your problem really with arpeggios, or is it with the slurs shown above?
I tried fussing with the situation. I do not consider myself overly adept with this process, but the first step I used was to hide the triplet brackets and lower the numbers closer to the triplet beams.
After that I adjusted one of the slurs and copied it to the other locations with ALT/OPT + Click, but I still had to do a lot of individual fussing with slur control points in Engrave (with results I am not sure would pass muster with a real engraver).
My problem is the arpeggio it self. How do I do that without a computer. The triplets are in the bass clef, but i want the C to go up without the 2 previous notes going up. How do I do that without using a computer?
Have you consulted the ipad manual?

The iPad Help is very well written, structural, logical, but some images would help finding things easier.
It is good to know that in the iPad interface of Dorico the bit beyond the top menu bar is called secondary toolbar. That’s where one can find the little three dot Context Menu.
