I want to assign the effects listed above to only one note. How do I do that?

With the shift-D dynamics popover, if you hit alt-enter instead of just enter, that dynamic will affect only that staff. Is that what you’re looking for?
A dynamic will always only be added to the selected notes. No need for alt-enter, just “enter”
Ah - I meant for a multi-staff instrument like piano. If you input a dynamic for piano (or organ, marimba, harp) it will affect all staves unless you hit alt-enter.
Ah, sorry, my bad. Don’t work with those instruments too often
Of course the accents are not dynamics and are thus assigned differently; and of course crescendo and diminuendo (even if assigned in their text form rather than as hairpins) are seldom assigned only to one note.
Voice specific dynamics also require the caret to be active at the time of input, in addition to using the Alt/Opt key.
You may also need to enable independent voice playback in Play mode.
