One hundred apologies if this simple question has been asked, but I searched and nothing came up.
Change the font for instrument names? Am I a little dense, or is there no option in any of the usual menus to modify these names?

You can indeed: try editing the ‘Staff labels’ paragraph style in Engrave > Paragraph Styles.
