If I have understood correctly, this is not possible. Am i right? Or is there some way to do this other than overrides where I need it?
Actually, this does work (in recent versions of Dorico):
Make sure that in Project info, at the bottom in the Project section: the option for Resolve Markdown is enabled:
And then you can enclose any word between asterisks to make it italic, like this:

Yes, it works for all fields in Project Info.
