I’m wondering if this is as expected or not – doesn’t quite feel right that the key signature change doesn’t match the ‘current’ clef, but the original one. However, I’m happy to be educated if it’s standard engraving practice.

being the below example the obvious “workaround”, your described issue seems indeed like an undesirable behaviour.

Cue clefs are not “real” clefs, so they don’t affect the actual clef in force on that staff. You have a couple of options, including the one Christian has suggested; another option would be to create a real treble G clef at the start of the cue, which can be hidden in the full score if need be.
