How do you tell your percussionists what is in their kit? I can’t seem to find a place to do that. See first page of percussion, with staff lines not labeled.

Yes, Anders has given you the bare minimum information, but it is of course absolutely correct: you can create a percussion legend via Edit > Percussion > Legend for All Instruments.
