For some reason, I have the title of the flow appearing in big (as on the first page) on the second and subsequent pages too, together the with the mini title:
This has happened on a couple of flows already, and I just deleted the text then, but it keeps happening on other flows.
Can anyone help please?

Ideally we need the project file, as the must be something going on with the master pages. You can strip it down (delete all the music, playback template “Silence”) and post it here, I’m sure it’ll be easy enough to figure it out. It’s hard to tell from just a picture.
Is this set correctly, in Library > Layout Options?
If so, or if setting this now doesn’t correctly solve the problem on the affected pages, it’s likely you have Page Overrides on the problem pages (caused my trying to solve the problem by deleting things manually or dragging frames around in Engrave mode).
Page Overrides can be removed from the right panel of Engrave mode, by right-clicking on the affected pages (which will have red corners) and choosing this from the context menu:

The overrides is indeed where the issue is - I tried to add subtitles below the flow titles, which I did manually by selecting the flow title on the score in write mode and typing it in. I guess there’s probably a better way of doing that?
The “Flow title in header” setting was set correctly BTW.
Yep, the « correct » workflow (as in avoiding overrides at all cost!) is to edit the page templates and the flow headings template (below the page templates, Engrave mode right panel)
Double click the flow headings template, then in the editor, add the appropriate token below the flow title token (use right click to insert the token, no need to type it). Apply and close.
