Although I can hear everything during recording, the midi track seems to disappear right after I press the stop button. It’s as if nothing is being inputted into the daw at all. Please help me

Hello, what do you mean by “virtual instrument keyboard”?
If you mean a keyboard inside the plugin’s window, it won’t work, these keyboards are there just for previewing purposes as far as I know.
You can use Studio→On-Screen keyboard for this. Now, if you’re using this one, you have to make sure that you setup your track’s MIDI inputs to ALL MIDI Inputs:
