When you color a folder in the arrange view, all the clips within that folder inherit the color and get colored in the arranger.
It doesn’t color the actual channel, and therefore doesn’t color channels in the mixer.
If you have 20 vocals in a folder and want them all blue in the mixer, you have to color them individually.
It should assign the color to all tracks in the folder in one go.
