Pertaining to the Composer + Orchestrator text at the top right of the score, I’m trying to move its location a little higher, but I can’t find in the manual where it tells me how to carry out that simple goal. I put it in engrave mode, and the graphic editor is selected, but I can’t even select the text or the frame.
Am I on the right track? I know there are alternate ways to do many things in D5, but I’m often unsure of the best way.

follow this instructions:
-Engrave Mode
-Double click the First page template
-Select the Frames icon
-Select the desired frame
-Click tab till no green points are selected, just the frame itself
-Move it with alt+arrows or alt+command+arrows (for bigger movements)
-copy your editing to the right page with the icons on the top
-click apply and close

Also, IIRC the text is by default centered vertically in the text frame. One can use the Properties panel to top align it if one desires.
