I have a bit of music where the players play a sort of swelling gesture but they need to also cresc. and decresc. it in the macro sense. I am attaching an image of what I created in another program and I’m wondering if this is possible in Dorico, and if so how?
You can have them simultaneously as dynamics if they are not at the exact same rhythmic position, but it is a bit messy.
To the left, the mf decresc is a 32nd to the right, hairpins flipped.
To the right, first hairpin a 32nd to the right, mf decresc moved down in engrave mode.
Another good hack, I like it! I’ll take note of this, but in this specific circumstance I think the shift-X work around that the guy above recommended will do the trick here.

I wonder if voice-specific dynamics might work in this case too i.e. one would have the swells and the other would have the cresc./dim.
See step #5. Basically, during Note Input you enter the dynamics using the popover, but rather than pressing Enter, press Alt/Opt+Enter. This will link the dynamics to only the voice which was activated at that time.
I gave this a shot. It only seems to work if a staff has a pre-existing secondary voice. When I try to enter an alternate dynamic to my clarinets (which earlier on have a split voice) it works like a charm–genius idea! When I try to do it on my oboes, though (who have only ever had their one voice) it will overwrite the main dynamic. This is a great workaround, and maybe in some contexts it would make sense for me to just enter some earlier oboe music as an additional voice to open up this possibility, but for the context of this current project your earlier suggestion of shift-X is going to be the right tool.
