Music for a symphony orchestra - score and parts

I’m a beginner in dorico after 30 years with Finale.
I want two flutes (and clarinets, trumpets…) on the same staff in the score, but I want the players to have their own parts. How do I do this?

I’ve seen a video somewhere that showed how the text “a 2” and “1” in the score automatically affects the parts. This would be a great feature, if I only knew how to do the it.

To do that you need to use the condensing feature.

Just to be clear, in Dorico it works the other way round: you write the separate parts however you want, and then the 1. / 2. / a 2 appear in the score (more or less) automatically. What might be confusing matters is the fact that a recent update to Sibelius does in fact implement Condensing in the reversed way as you describe. (would that be Evaporating?)

Whichever way round it goes, this is a rather complicated area with a lot of annoying edge cases. If the forum’s Search function doesn’t help you, please don’t hesitate to ask questions, however basic you think they might be. :)
