There is no playback in the score editor. It is only a grafical representation of the midi you have in the project. Volume settings you have to do in the DAW!
Or you could import it to Dorico, if you have that.
Of course there is playback in the score editor.
The Score Editor is a midi editor.

While there is no velocity lane in there, you can still use the Logical Editor and other midi tools to change velocity, etc.
There are several methods to control volume depending on the VST plug-in, so @Alan-Russell please specify precisely what method you need if you need more info

In the Score Editor you can playback the events (multiple) select notes and edit them, i.e., change velocity in the info line, edit pitch etc., etc., etc.
Well, I mean that there is no direct volume controll in score editor, but I forgot the possibillity to change the velocity in the info line. ![]()
And the midi playback features are a addon to the DAW.
